This is John, doing his thing behind the counter. An Irishman, he was a French chef and decided that Spanish cooking was a lot more fun. Note the trotters (pig's feet) hanging above the counter. It's a creative and interesting addition to the otherwise rather minimalist decor, and very fitting. I completely failed to notice them on the first several visits.
